Fresh Mozzarella with Watermelon and Balsamic Drizzle

Ingredients
  

  • 1 fresh cut prepackaged watermelon cubes or 1 small ripe watermelon cut into 1-inch cubes (about 3 cups)
  • 1 lb fresh mozzarella cut into 1-inch cubes
  • 1/4 cup fresh mint leaves chopped (optional)
  • 1/2 cup balsamic vinegar
  • 2 tbsp honey
  • 1/4 tsp salt optional
  • Freshly ground black pepper to taste optional
  • 2 tbsp olive oil optional

Instructions
 

  • Start by preparing your balsamic drizzle. In a small saucepan, combine the balsamic vinegar and honey. Stir until they are fully mixed.
  • Bring the mixture to a boil over medium heat. Then reduce the heat to low and simmer until the mixture is reduced by half, about 15 to 20 minutes. The balsamic drizzle should be thick and syrupy by the end. Set aside to cool.
  • In a large bowl, gently toss the watermelon cubes, fresh mozzarella cubes, and chopped mint leaves (if using).
  • Drizzle the olive oil over the watermelon and mozzarella, then season with the salt and freshly ground black pepper. Toss again gently to mix well.
  • Arrange the watermelon and mozzarella on a platter or individual plates or use skewers.
  • Finally, drizzle the cooled balsamic reduction over the salad just before serving.
